Chicken Cordon Bleu Casserole

What a fast hearty recipe to make during the week.  I was surprised that even though this is a Paula Deen recipe there isn't much butter and there is no cream cheese in sight!  It does need something to moisten it up a bit, but all in all a very good dish!

Chicken Cordon Bleu Casserole

Ingredients:
2 tablespoons butter
1/2 large onion, chopped
2 cloves minced garlic
2 cups shredded  cooked chicken
3/4 cup diced ham
1 cup uncooked long-grain rice
1 1/4 cups chicken broth
1/4 cup milk
salt and pepper to taste
1 cup Parmesan cheese
Directions:
Preheat oven 350 degrees and spray a 11x7 inch baking dish with Pam
In a medium saucepan, melt butter and add onion and garlic cooking until tender.  Add chicken and ham, cook until heated through.  Add rice and cook for 1 minute, stirring constantly.  Stir in chicken broth, milk, salt and pepper and cook for 2 minutes.
Pour mixture into baking dish.  Sprinkle with cheese.  Cover and bake for 45 minutes or until rice is fully cooked
